Grilled Corn Pasta Salad

This grilled corn and pasta salad is the perfect mix of two summer favorites, served nicely with a glass of Grillo from Sicilia DOC.

Ingredients:

  • 4 Large ears corn, husks removed
  • 1 ½ Cups uncooked penne pasta
  • 2 Cups cherry tomatoes
  • 1 Medium zucchini, thinly sliced
  • 1 Can (2 ¼ ounces) sliced ripe olives, drained
  • 1/3 Cup white wine vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoon minced fresh basil
  • 1 Tablespoon minced fresh mint
  • 1 Teaspoon salt
  • 1/4 Teaspoon pepper

Directions:

Grill corn on medium high heat covered, until corn blisters in spots, turning frequently. About 5-7 minutes. Remove from grill and cut the kernels off the husk and place in a large bowl.

Cook the pasta, drain and rinse in cold water to cool. Add to the bowl with the corn. Add the pasta, tomatoes, zucchini and olives.

In a small bowl, whisk the remaining ingredients to make the dressing. Mix gently with the pasta ingredients and chill for up to 3 hours. Makes 8 servings.
