Ingredients:

  • 3 Pounds small potatoes, different varieties
  • 1/4 Cup red onion, chopped
  • 1 Tablespoon white-wine vinegar
  • 1 Cup sour cream
  • 3 Tablespoons fresh dill, finely chopped
  • 1/4 Cup chopped fresh chives
  • 1 Tablespoon Dijon mustard
  • 3 Tablespoons prepared horseradish
  • 1 Teaspoon salt
  • 1/2 Teaspoon black pepper

Directions:

Boil the potatoes until fork tender, let cool to the touch, then cut into rough 1 inch chunks. In a large bowl, mix the remaining ingredients and fold over the potatoes. Chill the salad for up to 5 hours before serving.
