Steamed Clams and Chilled Grillo from Sicilia DOC

A fun, elegant appetizer to start a casual meal with friends. The mineral essence of the clams pair well with the subtle tropical fruit notes of a Grillo from Sicily.

Ingredients:

  • 24 cherrystone clams
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 garlic cloves, peeled and thinly sliced
  • Chopped Italian parsley leaves


Directions:

Heat a large sauté pan on medium high heat. When hot, add the oil and garlic and let the garlic sizzle for 30 seconds. Add the wine and clams, and cover the pan. Open the lid and check on the clams after 5 minutes and remove from the heat when the clams open. Transfer contents of the pan to a shallow bowl and sprinkle parsley on top.
